Steps to make Sate Ayam Madura:
- Prepare marinated sauce: Mix lime juice, garlic and pepper. Grind them with a blender or a mortar.
- Mix the mixture above to the diced chickens
- Marinate the chicken by keeping in the fridge. We’ll take out the chicken later
- Grind (using a blender or a mortar) all the ingredients in “ground spices”
- Prep the peanut sauce and mix it with the “ground spices”
- Stir fry peanut sauce and ground spices
- Add water to the pan until sauce is thickened and you can start seeing oil. Put away from heat and put it on the side.
- Take out chicken from the fridge and start sticking them onto wooden sticks
- Mix peanut sauce, sweet soy sauce and margarine. Use this mixture to brush all over the chickens, make sure to mix it evenly.
- On a non-stick grill pan, grill the chicken sticks and turn them around regularly. Use leftover sauce to add more sauce to the chickens.
- Take out from the heat once the chickens are fully cooked. Sprinkle with cut red onions, chilli sand sweet soy sauce to add more flavours
