  12. Take 1/2 tsp Black Pepper

  15. Make ready 1/2 cup Red Wine
  16. Take 2 sweet pepper s
  17. Prepare 2 tsp Parmeasan Cheese
  18. Prepare 2 tbls Tomatoe puree
  19. Get 1 bunch Fresh Parsley
Steps to make My Tomato Mozzarella Chicken:
  1. Heat the oil in a pan when hot add the onion and fry for 1 minute turning
  2. Add the Garlic and mix in fry again for 1 minute
  3. Add the basil,sage, bay leaves and Chicken and fry stirring it all around until the chicken is white all over
  4. Make a well in the middle and add the red wine and fry until for 2 minutes then mix in
  5. Add the canned tomatoes the cherry tomatoes and mix in black pepper and salt anď chicken stock and stir cook on low for 20 minutes stirring occasionally.
  6. Then mix in the tomato puree and stir
  7. Add the corgette and the sweet peppers let it simmer for 5 minutes.
  8. Transfer to a serving plate place the mozzerella slices on top and put it under the grill to melt it and brown a little for a couple of minutes
  9. Sprinkle over tbe top the fresh parsley and serve. With spagghetti or a pasta and sprinkle the parmeasan cheese on top
  10. Ready to serve and ENJOY!
