Steps to make Baked Garlic-Lime Chicken Drums and Shrimp:
- For the Chicken:
- Place the olive oil, lime juice, garlic, salt, pepper and ground cumin in a large bowl. Whisk to combine.
- Place the chicken drumsticks in the bowl and coat them in the marinade. Cover and refrigerate for at least 2 hours.
- Preheat the oven to 400°. Coat a sheet pan with cooking spray.
- Arrange the drumsticks in a single layer on the sheet pan. Bake for 40 minutes or until chicken is cooked through.
- Season sliced pepper generously with salt pepper, and a drizzle of oil. Add the pepper to the other half side of the baking sheet next to the chicken drums when there is about 15 minutes left on the chicken.
- For the Garlic Mash:
- Cut the potatoes into 1/2inch pieces.
- In a pan over medium heat, add oil until shimmering. Toss in garlic and cook until fragrant. Add in 2 cups water and potatoes and bring to a boil, 15 minutes.
- Drain potatoes, reserving 1/4 water for potatoes.
- Return potatoes to pan and mash, adding 1tbsp water until creamy. Season with salt, pepper, and parsley. Mix well.
- For the Shrimp: (This is done while plating)
- Pat shrimp dry with paper towels, and season with salt and pepper.
- In a small fry pan, add oil under medium-high heat. Once oil shimmers, add in shrimp and cook until opaque halfway, 45-60 seconds. Flip and repeat until cooked. Remove from heat and plate.
- Plating:
- Spoon mash in the center, then top with a single layer of peppers. Top with chicken drums, shrimp, and sprinkle parsley on top.
- Serve and enjoy!
